Food is the binding fabric in the patchwork that makes up France. Each region and city has a quirk of cuisine or a culinary niche, which adds to the identity of that area, if not defines it to the outsider. Fancy a feast of Camembert? Go to Normandy. If you want to pig out on the country's best pork, then make your way to Alsace. 

From the outside, there is a commitment to perfection that can seem like arrogance or snobbery. Grapes grown, picked, fermented, bottled in accordance with the strict guidelines of champagne production will not rightly be champagne unless it is grown within the terroir of the Champagne region. But these commitments to process do not come from a place of arrogant exclusivity. Quite the opposite. They come from a deep-seated respect for tradition.
